I'm pretty pleased with my accomplishments today. I double checked all of the incoming mail to see if I had missed any bills. I'll write a few checks tomorrow morning over coffee. In addition to getting a very good start on laundry catch up and the house being fairly clean and tidy, I now have several things in the fridge to help with meals for the week. I made hummus, tabouleh, sauted zucchini, muhammara, cucumber in minty youghurt, and pita dough.
The pita dough is a recipe from Pete Bakes, except I couldn't believe there was no sugar to feed the yeast and so I added about a teaspoon and I didn't feel it was mixed thoroughly enough without kneading so I gave it a few turns in the bowl. I'm excited about making a single pita and storing the rest of the dough in fridge for next time. I got the big tub o'organic spinach leaves, so tonight I am planning a spinach salad with hummus, tabouleh, zucchini, muhammara, cucumber in minty youghurt, and piping hot pita bread. I wonder if the humidity in Kea'au would make it a great place to experiment with sourdough. I'll have to see if there is a recipe in my bread book.
I made pupusas again today. I filled them with pulled pork from last weekend's party, mozzarella cheese, and canned green chillies. The second experience definitely added to the quality. I now understand that pulling the masa up over the filing and then pressing them out means that you have filling much closer to the edges and it makes it easier to get them much thinner. Thinner contributed to them cooking more thoroughly and also meant that the filing was just much closer to the surface. I used twice as much filing as yesterday and I cooked them longer so they were crispier as well. I took one down to Larry of Dos Okies. He was set up at the co-op for some sort of function and he seemed to be very pleased that I brought him a sample and said he really liked it. The desire to share with Larry has me wondering, am I meant to share food? I seem to really enjoy it, what does that mean? What could it mean?
I've had The Fabulous Destiny of Amelie on for most of the day. I never knew the full title but today I took the time to watch the bonus CD and it reinforced my love for this movie. I moved a bunch of movies by French directors to the Netflix queue. I did not realized that the director of Amelie also directed one of the Alien movies. It strikes me that knowing the full title of Amelie makes me love the movie even more.
Bella has been super sweet today and even tried to climb in my lap at one point when we were playing. Sophie is happy the couch has been eliminated of barriers and grabs a few minutes of joy and comfort each time I leave the room.
A late supper seems in order as the afternoon seems to stretch into the evening at this time of year. It'll be light until after 8:00pm tonight; we're getting over 14 hours of daylight now.
Seems like I'm in pretty good shape to start the week.
