Reading the blogs from Hawaii, I am thinking about Loco Moco Makeovers.A week or two back, I looked at some chutney recipes for ideas and then I whipped up a batch of my very own Rhubarb Ginger Chutney. I went very heavy on the fresh ginger and then added some powdered ginger as well. The tartness from the rhubarb and the vinegar, the kick from the ginger, the sweetness from the onion and sugar are nicely balanced and make this a tasty sauce with chicken. Last night I had it with roasted chicken and fresh spinach.
This morning for brunch I am having Rice, Roasted Chicken, Fried Egg, and Rubharb Ginger Chutney. I'm taking suggestions for names. The only thing I've come up with so far is Loco Moco Mumbai.
